Avocado, Truffle & Egg Breakfast Toast

  • Avocados originate from south-central Mexico. It’s very common in many Mexican dishes. Burritos, tacos, and the infamous guacamole dip!
  • Avocado toast became popular a few years ago, and now there are so many ways to make it. Whether it’s for breakfast or a midday snack, this toast is super easy, fast, and filled with many complimenting flavors.
  • There are four main components to this breakfast toast. Bread, tomato truffle jam, avocados, and a fried egg. We used classic sourdough bread. Thick, crusty artisan breads like sourdough, rye, wheat, or multigrain work perfect for morning toasts. The base of this toast is our Tomato Truffle Jam.
  • It’s important to use ripe avocados for this toast. Ripe avocados mash easier and are a great consistency for spreading across your toasts. Look for avocados that yield a bit to a soft squeeze. Avocados that are mushy, too-soft on the insides, or speckled with brown bits may not be the best option for this toast.
  • Feel free to switch up your avocado toast! Some cool ways to incorporate the same flavors in a new fashion would be by using sliced avocados instead of mashed, a scrambled egg instead of fried, or a new jam/jelly base. Some of our products that would work great with this toast are our: Red Hot Jalapeno Jelly, Mild Green Jalapeno Jelly, Peach Vanilla Bourbon Preserves, or Almond Cherry Jubilee Jam.
  • Adding fresh herbs or extra toppings like cucumber, sprouts, radishes, pickled onions, or a feta cheese crumble will give you new and fun variations of this breakfast toast.
  • Breakfast toasts are the best way to spice up your traditional breakfast foods. Variations for lunch can be a chickpea-based spread, or a black bean based spread. Using the same method with different ingredients will always add a bit of spice to your home-cooked meals.
  • The toppings for this toast are endless. Add olive oil, drizzle sriracha, or add feta cheese crumbles for this morning toast.

  1. Toast your sourdough bread. Take 1 tbsp of Tomato Truffle Jam and spread it on both toasts.
  2. In a small bowl, mash an avocado and add salt and pepper. Spread the mashed avocado on top of the tomato truffle jam.
  3. In a large skillet, fry your eggs. Layer the fried egg over the avocado mash and top off with red pepper flakes!
  4. For an extra boost, drizzle with olive oil, add feta cheese, or sriracha sauce!
