Vietnamese Beef Stew

The star of this traditional stew is the broth.  Rich, fragrant, and slightly spicey, grab some bread and enjoy!  Don’t miss the recipe on your jar of Stick+Tine Beef Pho.  Have a few jars on hand to create soup in minutes. 

Serves 4-6
Time:  1 hour

Ingredients:
Juice 1 fresh lemon
1 tablespoon grated lemon peel
2 tablespoons olive oil
1 medium onion sliced
1.5 lbs beef stew meat
4 tablespoons tomato paste
2 – star anise
6 cups beef broth
1 -12.4 oz. jar Stick+Tine Beef Pho
1 cup coconut milk
3 large cuts cut into 2-inch slices
1 tablespoon paprika
Optional: sliced green onions, chile oil for heat.

Directions:
In large pot pour in oil, heat to medium-high.  Add the lemon, lemon peel, and stir for a few seconds.  Add the onion and beef stir for about 3 minutes.  Add the tomato paste, star anise, broth, coconut milk, paprika, carrots and Stick+Tine Beef Pho.  Heat to medium-low and covered for 45 minutes to 1 hour, until everything is tender.  Stir in optional chile oil.
