Prep time: 10 minutes plus 15 for marinating
Ingredients:
1 lb. ground chicken
1 cup chopped onions
½ cup chopped red bell peppers
½ cup chopped celery
1 tablespoon olive oil
½ teaspoon salt
3 teaspoons cornstarch
1-2 teaspoons water
1 head romaine lettuce
1 – 12.4 oz. Stick+Tine Pork Tonkotsu Japanese Ramen Base
½ cup chopped peanuts plus ¼ optional topping
½ cup julienne strip carrots
Directions:
In a medium bowl combine the chicken with the salt and Stick+Tine Pork Tonkotsu Japanese Ramen Base. Cover and let marinate for 15 minutes. While chicken is marinating peel the romaine leaves off the core, rinse, and let air dry. Drain liquid off chicken. In a medium frying pan or wok on medium-high heat add oil then add marinated chicken, celery, red bell pepper, and celery. Stir fry for 5 minutes or until chicken is cooked through. Mix water with cornstarch to make a slurry. Add cornstarch to pan along with carrots and peanuts. Cook for 2 minutes on medium heat or until mixture thickens. Remove from heat. Place filling in the romaine leaves and serve. Optional: top with chopped peanuts. Cooks note: The carrots are added in last to remain crisp.
