Das Peach Haus Cinnamon Rolls

We promise this recipe is worth the time to create these light, fluffy, peach cinnamon rolls.  Filled with our famous peaches your family will want them to be a weekend regular or a quick bite treat to take to work.  It’s a perfect pan of kindness to give someone who needs a lift during social distancing.

Ingredients:

  • 4 ½ teaspoons yeast
  • 1 tablespoon sugar
  • 1 cup lukewarm water
  • 1 cup of milk scalded
  • 6 tablespoons shortening
  • ½ cup sugar
  • 1 teaspoon salt
  • 7 cups sifted flour
  • 3 eggs beaten

Peach Cinnamon Roll filing:

  • 6 tablespoons butter melted butter
  • 1 ½ cups brown sugar
  • 1 teaspoon cinnamon
  • 1 cup Fischer and Wieser Charred Peach Sauce
  • 1 cup finely diced peaches – Fresh is best but canned can be used.  Drain well and pat dry if using canned. 
  • ½ cup chopped pecans

Frosting:

Directions:

Dissolve yeast and 1 tablespoon sugar in lukewarm water. Let sit for 5 minutes. Scald milk, add shortening, sugar, and salt; cool to lukewarm.  Add 2 cups flour to make a batter to milk mixture.  Add yeast and beaten eggs; beat well.  Add remaining flour or enough to make a soft dough.  Knead lightly and place in a greased bowl.  Cover and set in a warm place, free from draft.  Let rise until doubled in bulk, about 2 hours.  When light, punch dough down and shape for desired recipe. 

While dough is rising in a medium sauce pan on low melt butter then add brown sugar, cinnamon, Fischer and Wieser Charred Peach Sauce, and diced peaches.  Remove from heat and set aside. 

Roll dough into oblong piece ¼ inch thick.   Brush with melted butter/fruit mixture over the rolled dough.  Brushing to about a half inch for edge.  Roll up as for jelly roll and cut in 1-inch slices.  Place cut side up, about 1 inch apart in large shallow greased baking pan.  Cover and let rise in a warm place for about an hour.  Bake at 425 degrees for 20 minutes or until golden brown.

In a mixing bowl beat cream cheese and butter until smooth.  Add vanilla, salt, diced peaches, and Fischer and Wieser Charred Peach Sauce.  Mix well.  Add milk until desired consistency.  Spread over slightly cooled rolls.  Sprinkle with chopped pecans. 

Note:  What is scalded milk?  Milk heated to no higher than 83 degrees.  Think about what you would heat a baby bottle too.   In old recipes, this was called for to kill any bacteria because milk wasn’t pasteurized.  Now it is used to deactivate the whey protein which can weaken gluten preventing the dough from rising properly.
